This is a great dish to make in the mornings when you have leftover meat. Leftover Sirloin Steaks, Rib Eyes, Pork Chops, Lamb Chops…any leftover meat you have in the fridge can be cut up into small pieces and sauteed on high heat in a pan with some seasoning and used in a breakfast wrap. Turn a basic breakfast dish into a gourmet meal using leftover meat sounds like a win win to me.
Leftover steak cut into small cubes (1/2-3/4cup)
2 eggs whisked
1 small campari tomato
1 veggie wrap (carb free wrap made of vegetables) you can also use regular tortillas
2 tsp avocado oil
1/2 tsp taco seasoning or old bay seasoning
pinch of garlic powder
salt and pepper to taste
1. Heat a nonstick pan on high heat and toss your steak into the pan and cook with the taco seasoning and garlic powder. Add salt and pepper in your whisked egg that’s in a separate bowl.
2. In another small pan, heat 1 tsp avocado oil and pour your whisked egg into the pan
3. Scramble for 30 seconds and turn off heat and let it cook slowly for another 30 seconds.
4. Plate your soft scrambled eggs over the wrap and top with the steak and garnish with chopped tomatoes
Optional: Drizzle tapatio on top for a kick!
