Mason Jar Salads : Good Day Sacramento
FINALLY! I get a moment to sit down and share my segment on Television last week. I’m super excited to share the recipes for all the Mason Jar Salads I covered last Thursday, live on Good Day Sacramento! I went on their 9:30am spot and talked Summer Entertaining with Tina Macuha. Along with sharing my mason jar salads, I also shared my tips for a great summer wine as well as a quick and easy delectable dessert you can whip up in under 5 minutes. The 4 salads I covered are all very unique in flavor. You can do any of these for picnics, dinner parties on the patio/terrace, casual lunches on the beach, anywhere and anytime. It’s also great for those who want to pack their own healthy lunches. It’s beautiful, healthy and easy to make. You can make it ahead of time and put in your fridge!
The key to making these salads is to layer the ingredients carefully. Be sure to layer the bottom with the heavier items like beans, proteins, cucumbers, etc. Then add items like cheese, nuts, dried fruits, cut fruits, etc. Top with the lightest ingredients such as mixed greens, or herbs. You can even layer the dressing on the very bottom first if you don’t want to carry a small container of dressing. Takes care of needing bring anything else with you.
Tip: When composing these salads, be creative and think of colors you are working with. Try to incorporate veggies, fruits and nuts into your salads so you get great texture and flavor but also colorful compositions. Have fun with these beautiful mason jar salads!!! Ok enough talking, here is the first salad I’m going to share with you.
1. Italian Chopped Salad –
Ingredients are listed from bottom layer (starting at A to the top layers ending at )
A. Parmesan Oregano Dressing
B. Garbanzo Beans
C. Provolone Cheese
D. Sliced Salami
E. Sliced Turkey
F. Diced Campari tomatoes
G. Hand torn basil
H. Butter lettuce (sliced)
Recipe for Parmesan Oregano Dressing:
1 Tbs mustard
2 Tbs lemon juice
1 Tbs dried oregano
2 Tbs grated parmesan
3 Tbs olive oil
1 tsp minced garlic
tiny drizzle of agave
WHISK everything together until emulsified
Don’t forget to pair this great salad with my suggested wine on the show. Sparkling Chardonnay from Francis Ford Coppola Winery is the perfect summer wine. The beautiful Gia Bottle fits into any summer decorative setting with it’s pretty pink and gold details.
And end the light meal with a quick dessert made with coconut thins, speculoos cookie butter and fresh strawberries. Sparkling chardonnay and this dessert is a match made in heaven:)
