Here is a slightly more exotic salad to make to help bring some variety to your daily salad intake. Oftentimes we have the same salads over and over either at home or out at a restaurant or a salad bar. Finding unique salads can be difficult. So why not make your own at home. You can be creative and find new ways to make eating healthy exciting and adventurous.
Try my Indian Inspired Dressing paired with some basic salad goodies. Think a bunch of raw seeds, power greens like kale, spinach and some beauty boosting fruits.
Ingredients: Serves 1
-3 cups of mixed power greens (My favorite is the one from Trader Joe’s. It has baby kale, baby spinach, and baby chard but any of your favorite blends of greens will do)
-1 piece of grilled chicken (I make my own and keep them in the fridge for quick and easy salads but you can buy roasted chicken from the store and use the white breast meat if you want to save time and not make your own)
– 1/3 cup sliced strawberries
-grilled asparagus (again these are made ahead of time and stored in the fridge to be used for quick salads) You can substitute this with sliced cucumbers if you don’t want to cook anything
-1/4 hand torn dried unsweetened apples(This is a great salad topping! Tastes amazing in salads and adds some fiber along with an extra layer of texture in your salads)
-1 tablespoon chai seeds
-1 tablespoon flax seeds
-1 tablespoon raw pumpkins seeds
Dressing: (Spicy Coconut Yogurt Dressing)
-1 tsp fresh minced garlic
-1 tsp fresh minced ginger
-1 tbsp fage non fat greek plain yogurt
-1 pinch of tumeric powder
-1 tsp braggs soy sauce
-1 tbsp coconut oil
-1 tsp siracha
-1 tsp lemon juice
1. Whisk all the ingredients for your dressing together until emulsified into a thick sauce like dressing.
2. Prep your salad ingredients into a large bowl
3. Toss dressing on top and start mixing with a fork and spoon until fully incorporated
