Creamy Crab Udon with Uni

Hopefully the wait has been worth it for this recipe for all of you who requested it earlier this week. This is one decadent rich dish you can make at home to impress any guests with. The key is to make sure you get a nice batch of fresh uni.

The sweetness of the uni mixed into the creamy crab udon makes a deliciously rich pasta dish.

Creamy Crab Udon with Uni

Ingredients: Serves 2
2 packs of individually packed fresh udon (I bought mine from the Japanese market)
1/2 lb fresh crab meat (I found dungeness crab meat from the Japanese market)
1 pack of fresh uni
1 whole egg raw
1/2 cup whipping cream
salt and pepper
juice of 1/4 lemon
chili flakes
1 tsp minced garlic
1 tsp olive oil

Method:
1. Bring a medium pot of water to boil
2. In a nonstick pan, heat 1 tsp olive oil and add your garlic, crab and juice of lemon
3. Sautee for 30 seconds and add your cream and let it simmer
4. Season with some salt and pepper and taste. Now add your udon into the boiling water. Boil for 1-2 minutes and remove udon into a colander
5. Add 3/4 of your uni into the sauce and whisk on low heat along with the raw egg
6. Whisk until fully incorporated and add your boiled udon into the pan and stir.IMG_6436
7. Bring the heat back to high and stir for 30 seconds and taste the sauce.
8. Add your chili flake and season with some more salt if you want a little more saltiness.
9. Plate the pasta give it a few fresh cracks of black pepper and a small sprinkle of red chili flake. IMG_6439
10. Lastly garnish with a piece of fresh raw uni and a slice of lemon.

Tip: Before serving, I actually squeezed a tiny bit more of lemon juice on top. Mix your whole dish with a fork and enjoy!!!
