5 Minute Asian Lentil Salad
I am obsessed with Trader Joe’s vacuum packed steamed lentils. They are much better than the canned versions and last months if not opened. They are perfectly cooked and great for salads, soups, and stews. When pinched for time I reach for my lentils and turn it into a quick salad. It’s low in fat, high in fiber and has protein. It can be a meal in itself. So it’s a win win. Try this recipe which is one of my favorite meals to have. It can be enjoyed as is or with some grilled fish or chicken or tossed over some steamed rice.
5 Minute Asian Lentil Salad
Ingredients: Serves 1
2 cups lentils (precooked)
1 cup chopped cilantro
1 roma tomato diced
1/2 tsp minced garlic (use the ones in the tubes..saves time)
1/2 tsp minced ginger (use the ones in the tubes..saves time)
1 tbsp sesame oil
1 tbsp braggs soy sauce (or low sodium soy if you can’t find braggs
2 tsp lemon juice
1 tsp siracha
1 tsp red chili flake (if you like it spicy)
Method:
1. Toss everything into a bowl and stir with a spoon to fully mix.
2. Serve!! YES it really is that easy.
