Farmer’s Market Salads
Ironically, I find it hard to get quality salads at restaurants these days without it being the usual “suspects.” I don’t want another caesar salad even if it means using kale. I don’t want to see another bacon poached egg frisee salad either. What happened to just having fresh greens, fruits, and other healthy fresh produce tossed into a simple salad. Some of my favorite salads don’t have any bacon or super heavy dressings. I’m also a fan of colorful salads. You want to feel like you are eating something beautiful and bright. Here is a ridiculously easy salad to make. I find my greens for salads from the Farmer’s Market and buy a large bag to be enjoyed over a span of a few days. Try this easy, delicious and gorgeous salad.
Farmer’s Market Salad
3 cups fresh greens (your choice of salad greens, kale, arugula, butter lettuce, etc)
1/2 cup sliced strawberries
1/2 cup fresh blueberries
handful of slivered raw almonds
1/4 cup fresh goat cheese crumbles
dressing: easy breeze agave balsamic dressing (1/4 cup olive oil, 1/4 cup balsamic vinegar, 1 teaspoon agave, season with salt and pepper)
Tip: If you are jonesing for something crunchy in your salad but won’t bust that button off your pants, try crumbling preztel thins. They are lo-cal healthy crispy snacks you can use as your crunch to the salad.
