Cucumber, Celery, Spinach Frittata
Here is another great way of using leftover pulp from juicing. Now that you’ve seen my High Fiber Bar recipe, you can try my high fiber frittata 🙂
This recipe calls for mostly pulp and not much eggs. You can use whole eggs beaten or egg whites. Egg whites would be great to use if you want something lighter and a little less calorie although whole eggs are not bad for you either. I used whole eggs in this dish since I allow myself two whole eggs a day. Try it out with some hot sauce you’ve got yourself protein and fiber to start your day.
1.Whisk the beaten eggs into the pulp and season with salt and pepper
2.Heat your non stick pan to high with some olive oil and pour 1/4 cup of the egg pulp mixture into the
pan and let it cook slowly like you would with pancakes
3. Flip over to brown the other side.
4. Remove and start on a another piece.
5. You can also use a large pan and cook the whole pulp egg mixture at once.
6. Serve with some hot sauce and enjoy!!!
