Healthy Lunch Box Ideas
You may recall from a few weeks back when I had discovered the amazing compartmentalized lunch boxes from my favorite Five and Dime store Daiso. I was absolutely ecstatic with the find and wanted to create several packing options for people to try out at home. It’s especially great for those on the go or people who sit at their office desk and don’t have the time to go out and eat long meals but yet they want to eat rather healthy.
Here is another set for you to try out. This box set actually has a great little pink band that helps you carry two boxes at once. This set here is good enough for a long day at work, lunch and dinner even.
For the first box, I created Chicken Taco Salad. This salad is super easy to make with just a few simple ingredients.
Chicken Taco Salad
1/4 cup corn, if frozen, boil and chill
1/4 cup chopped green onions
1/4 cup shredded low fat jack cheddar
1 cup grilled chicken
1 cup shredded iceberg lettuce
1/4 cup diced tomatoes
2 tablespoon salsa
1/4 cup tortilla chips (crushed) (wrapped in a saran wrap to keep moisture from it)
one small container that holds your dressing (low fat balsamic vinaigrette if you want something healthy)–to cut back on fat even more, you can omit dressing and bring a larger container of salsa and use that as your dressing
1. Layer the bottom with the lettuce
2. Put the rest of the ingredients in each part of the box, creating sections/areas. I put the salsa in the middle and wrapped the chips in saran wrap. Place everything in the box and cover.
For the other box, I put turkey slices and edamame for protein, low fat pepper jack cheese sticks, celery sticks and carrot sticks for fiber and some calcium. And a peanut butter jelly apple sandwich as your healthy sweet pick me up. The bread is a whole wheat high protein bread from Trader Jos and the peanut butter is a low fat peanut butter. I trimmed the edges to make it smaller, cutting a little carb out and making it a neat little sandwich that fits into the box.
