Healthy veggie scramble
Here is a two egg scramble I made with loads of kale, broccoli and tomatoes. Add a dollop of siracha or Fang’s chili black bean sauce and you are set! The flavors of the chili make this egg veggie scramble satisfying and full of flavor. Be sure to cook the veggies first in the pan before adding your whisked eggs. Let the eggs cook into the veggies since your ratio of eggs is much lower compared to the veggies. This will allow the eggs to bind to the veggies rather than having the little eggs cook separately from the veggies.
