HEMP 9 Course Tasting Menu created by Chef Kathy Fang
For the last 2 years I have created a menu as well as cooked a 9 course dinner using hemp products for the HIA. They host a dinner at Fang restaurant and send me Hemp Milk, Seeds, Oil, and Powder to experiment with. I have to say this year, I was particularly interested in creating some new dishes as my cooking has started to lean towards a healthier slant. This challenge of creating more vegan dishes using hemp was extremely exciting for me. I had an amazing time creating these recipes and also had the pleasure of meeting one of the founders behind these products that were sent to us. I also got to learn a little history on hemp as well as the health benefits of it. See below pic of the nutritional values it provides
I must say of all the products I worked with, hemp seeds was the most flexible. I was able to toss in a salad, use as filling for dumplings, use as a grain in my rice dish, and dessert. The texture is great but subtle and the nuttiness adds a great dimension to something you may be making.
This year I snapped some photos of the dishes so I hope you can enjoy some of the pics. My battery however died half way through so I was not able to capture all the dishes. At least you can see the first few dishes.
