What exactly is a typical day like for a Chef/Restaurant Owner?
My friend Carolyn Shek dropped by Friday night during dinner service and got to see some of the action that I go through on a daily basis. She snapped a bunch of photos to capture all the little things that I do throughout the evening. And thought it would be a good idea to share it with my readers.
This may certainly not be typical for all Chefs or Restaurant Owners but for me it is what I do everyday. I pop back into the kitchen to work the line when the kitchen is in the “weeds” and need help pumping out dishes. I also go back there to cook “off menu” dishes for customers who want to try something new. I take orders from customers, check on them to see how they are doing throughout the night. I help expedite the line and call out orders. I serve dishes at times to help the servers. I call out drink orders and clear tables when needed. I work with the hostess to see how many reservations we have and how long each table has before we turn over to the next group of reservations. I try to eat in between work in short 5 minute breaks. And of course people ask, do I yell… Yes I do sometimes and Carolyn did capture a photo of me giving my kitchen staff a face of disbelief and discontent with a few harsh words. I also goof off and have fun with my staff too. There’s a balance between the two 😉
So in other words, I basically do a little of everything on a busy night.
It keeps my job interesting and I get to move around and do front of the house duties as well as back of the house “kitchen” work as well. Hope you enjoy some these photos as well as get a better idea of what I do at Fang restaurant day to day. AND YES, I do work…too much. But I LOVE IT!
