I have to say, I feel very fortunate to have great friends in my life even though there are only a few and not in abundance. Last week Wasim, whom I know from the restaurant and eats at Fang restaurant quite often, baked me a loaf of gluten free banana bread. After we had a conversation about him sticking to the “Paleo” diet, he mentioned to me he bakes a mean gluten free banana bread using almond meal and butter. I told him that sounded wonderful and the next week he drops by with an entire loaf. How sweet is that? And he walked it over in the pouring rain and arrived to Fang drenched. I feel so special and can’t thank him enough for being so thoughtful.
The verdict on the banana bread. It was actually one of the best banana bread I’ve had in a long long time, not to mention the best gluten free bread I’ve ever had. It was perfectly baked with the crust being nice and golden and the center of the bread moist and dense. The center was such a treat as I love the slight sweet moistness of the bread. I can eat this all day long. It took me a little while to post this entry mainly because I wanted to do the bread justice by taking some good pics of it with a proper camera.
