Sesame Garlic Cucumber Salad

Here is a super easy and tasty recipe you can make in under 5 minutes.


1. Slice cucumber in half and scoop out the center

2. Slice into thin slices and place into a deep bowl

3. Season it with 1 tbls minced garlic, 2 tbls sesame oil, 1 tsp black pepper, 2 tsp salt and 2 tbls sesame seeds

4. Top with chopped green onions

5. Toss all the ingredients together and drizzle with some teriyaki sauce or unagi sauce and a tiny 1 tsp of rice wine vinegar. The combination of the salty soy, sweetness, and the vinegar creates a dressing that pops more and complements the fresh clean taste of the cucumbers.

Enjoy your salad on it’s own or have with some brown rice and tofu and you’ve got yourself a complete meal.

Another spin you can make to this dressing is add miso paste. You must premix this dressing in a separate bowl before tossing with your cucumber. The one below is the miso teriyaki dressing I made as an alternative with the same ingredients as the one above with the exception of adding a little miso paste.
