Vegetarian Lentils with Brown Rice

This dish is quick and easy to make when you have pre-cooked lentils sitting in your fridge. I have the pre-steamed lentils from Trader Jo’s in my fridge which I love to use to make stews, soups, salads, and stir frys with. Here is one of my favorite quick lentil stir fry recipes.
Vegetarian Lentil Stir Fry with Brown Rice
Ingredients:
1/2 half pack of pre-cooked lentils
1/2 cup diced green bell peppers
1/2 cup diced tomatoes
1 tablespoon yellow curry powder
1/2 cup minced cilantro
1/4 cup kimchee (optional)
1 tablespoon soy sauce
1 tablespoon sambal
salt and pepper to taste
sesame oil
Method:
1. Heat a non stick pan with some oil to high and add your bell peppers, tomatoes, cilantro, and curry power and stir fry for 1 minute or until fragrant.

2. Now add your lentils, 1 tablespoon of water, all your seasonings.
3. Stir fry until well incorporated and taste.
4. Once it’s done, serve with brown rice.


5. Mix together and dig in!
