I love tuna salad but most tuna salad is made with mayo and if you’re looking for a healthy salad, I would skip the tuna salads made with mayo and try the way Italian’s make their tuna salad. They toss their tuna with olive oil, lemon, salt, pepper, parlsey, capers, and cannellini beans. It packs great flavor minus the fatty mayo component. Top it over some mixed greens or baby romaine and you’ve got yourself a protein packed meal with healthy omega 3, fiber, and vitamins. Here is my version minus the capers with the addition of celery to add even more fiber.
Tuscan Tuna and White Bean Salad
1 can or jar of tuna (you can use the ones marinated in water or the ones packed in olive oil)
1/4 cup diced celery
1/2 cup white beans
2 tablespoon olive oil
2 cups baby romaine
2 tablespoon minced basil 2 tablespoon minced parsley
1 teaspoon chili flake
juice of 1.5 lemon
salt and pepper
1. Toss everything together except the romaine.
2. the romaine on the bottom of the plate or bowl and top it with your tuna bean salad.
