What do you do when you are on the go and need a quick healthy meal? Sometimes I’m running errands and going in between meetings to meetings and I need a salad filled with goodies but no restaurant or cafe has the right combination of greens and proteins. I go to Whole Foods!
I love the access to so many different grains, legumes, proteins, and veggies. No prep necessary, just grab, toss, and eat. So here is a great salad recipe of mine, using Whole Foods salad bar.
Super Quinoa Kale Salad

Ingredients:
brown quinoa
lemon quinoa
cranberries
almonds
shredded cabbage
roasted yellow beets
chopped scallions
sliced radish
kale
shredded carrots (yellow and orange)
shredded zucchini
Toss: everything together with a dash of braggs, lemon juice, olive oil, salt and pepper.
Voila! You’ve got yourself a super duper salad packed with so many veggies you would never be able to prep at home in less than 5 minutes. You can basically create an amazing meal under 5 minutes, eat and move on to your next errand under 15 minutes. That beats any wait or stop at a fast food joint and your choices at those places are far worse!

quinoa is delish. The texture is a little nutty and a little grainy like steel cut oatmeal. I love it in soups, in salads, and mixed with oatmeal even. It’s a great grain to eat and work with and is extremely nutrional
It’s very tasty and packed with lots of nutrients. Great alternative to other grains.

You can find more recipes on my blog for salads. I have a few kale salad recipes using salmon, fruit, quinoa, seaweed, etc. The key is adding many different vegetables to it to create different textures and to go easy on the dressing. Using lemon juice, a little olive oil, and salt and pepper is always a great way to make a light dressing.
