Super Diet Kale Stew

As a part of my attempt to eat healthier this week I decided to make the ultimate stew/soup that would not only fill me up but also provide me with plenty of fluid and vegetables, both of which I need lots of. This one pot soup/stew is perfect for those who want to make a simple meal which can last you a day or two.

Super Diet Kale Stew

Ingredients:
3 cups chopped fresh kale or frozen chopped kale (I used Whole Foods frozen chopped kale, chard, and mustard greens)
1 cup sliced radish or daikon
1/2 cup diced tomatoes
1 turkey breast sliced into small pieces (you can also use chicken)
1 carton of chicken stock or vegetable stock
2 big slices of ginger
salt and pepper to taste

Method:
* Put everything into a pot and bring to a boil first, then turn to low and simmer
* Simmer with lid on for 20 minutes until everything is soft and smelling fragrant
* Now add your fresh kale and let it simmer for another 10 minutes.
* If you are using frozen kale or chard, drop it in 5 minutes before serving so that your vegetables don’t turn into mush but rather have a little texture to them.
*Ladle everything into a bowl and serve with a side of dipping sauce for you radish and turkey meat

My sauce is a chili vinegar sauce ( 2 tablespoon white vinegar, 1 teaspoon salt and 1 teaspoon sugar, 1 teaspoon chili oil, 1 teaspoon chili flakes, 1 teaspoon soy)

You can also just use ponzu or just soy.

The meal includes all the fiber, vitamins, protein and fluid you need without loading up on carbs. Enjoy!
