Kat’s Mediterranean Themed Dinner

A few weeks back I ate at Le Mediterranean which is this tiny restaurant that serves, well Mediterranean food. I got their combo platter that had hummus, tzatziki, babaganoush, tabbouleh, greek salad, lentil salad, carrot and cucumber slices for dipping and of course pita. I loved the idea of mixing so many different salads and flavors together and using raw veggies as your accompaniment to your salads. Even though pita is great to have with all your dips and salads, the veggies simply add another texture to your meal and not to mention is even healthier for you.

So this meal inspired me to create my own Mediterranean dinner with a few of my own twists.

Homemade Tzatziki
Homemade Garlic Hummus
Carrots and Brocolli
Homemade Garlic Parmesan Lavash
Greek Salad
Spicy Cumin Turkey w/ caramelized zucchini and onions

Below I’ve included 4 recipes for the 6 components. I will post the other two recipes in my next post.

Homemade Garlic Hummus
Ingredients:
1 can of garbanzo beans
3-4 lemons juiced
1 tablespoon minced garlic
1.5 tablespoon tahini
Sea Salt
3 tablespoon of olive oil

Method:
• Use a food processor and blend everything together except the olive oil.
• Drizzle the olive in last and slowly until fully incorporated. Taste and adjust seasoning with lemon for more acidity, salt for more flavor and more olive oil to make the hummus smoother and less thick.

Carrots and Brocolli

Method:
• Slice your carrots thinly into long strips so you can use them to dip into your hummus and tztaziki.
• The broccoli I blanced since raw broccoli does not taste great to me unless it’s in a salad with lots of dressing. In this case I boiled the broccoli for less than 2 minutes and then shocked them in cold ice water to keep the broccoli nice and green and crisp. Serve cold along with your raw carrots

Kat’s Greek Salad

Ingredients:
2 roma tomatoes diced
1 whole cucumber with skin peeled off and diced
¼ cup diced red onions
¼ cup feta
¼ cup roughly chopped dill
2 teaspoon dried oregano
1 tablespoon dried parsley
2 tablespoons red wine vinegar
3 tablespoons Greek olive oil
Salt and pepper to taste

Method:
• Mix everything together and let it marinate for half hour.

Spicy Cumin Turkey w/ caramelized zucchini and onions
Ingredients:
¾ lb ground turkey
1 whole brown onion sliced
2 tablespoon minced garlic
1 teaspoon cumin
1 tablespoon oregano
1 tablespoon parsley
3 tablespoon sundried tomato paste or whole sundried tomatoes sliced
2 whole zucchinis diced
3 tablespoons soy sauce
2 teaspoon Tabasco
Salt and pepper
Olive oil

Method:
• Brown your onions and turkey first.

• Then add all your seasoning except the salt and pepper and add your zucchini.
• Cover with lid and let it cook down until the zucchini is soft and almost melted.

• Should take 15 minutes.
• Then remove cover and stir and taste.
• Season with salt and pepper to your liking.
Now serve everything together on platters and eat family style.

You can make little wraps with the soft lavash which you didn’t bake and you can top your baked crispy lavash with your various salads and dips too. The best thing about all this is that you can use many different elements of this dinner and mix it up and eat it however you like. It’s interactive, fun, and extremely tasty. Who said eating healthy isn’t fun and good?!

The perfect bite! (Spread hummus on your lavash, top with the spicy turkey, then the greek salad, and then a generous dollop of the tztaziki) Now I’m hungry :)
